The formula suits non-stick, ceramic-coated, enamel and hard-anodised cookware. Koh Kitchen Grease & Oil Cleaner is mildly alkaline and carries no abrasive particles, so it is the scrubbing tool rather than the cleaner that puts a coating at risk. Soft cloths, Swedish Dishcloths, Dish Sponge soft sides and Scrubby Pad soft sides are all fine. The Scrubby Pad scrubby side works with light pressure once you have tested it. Diamond Sponges and steel wool are for bare metal only, never for a coated pan. Coating quality varies between makers even within one coating type, so check the instructions that came with your cookware and spot-test in an inconspicuous spot first. Rinse the pan with clean water afterwards, because the cleaner is not food grade.

The scrubber. Liquid cleaners at moderate pH, Koh Kitchen Grease & Oil Cleaner included, do not damage a non-stick coating. Abrasives do. Always fine on non-stick: soft cloths such as Swedish Dishcloths and Universal Cloths, plus the soft side of a Dish Sponge or a Scrubby Pad. Use with care: the Scrubby Pad scrubby side with light pressure, tested on a hidden spot first, particularly on premium ceramic coatings. Never on a coating: Diamond Sponges and steel wool, which will scratch it. Diamond Sponges belong on bare metal only, such as uncoated stainless steel BBQ grates and bare-metal oven racks. For burnt-on grease a soft scrubber will not shift, soak the pan in warm water with the cleaner for 15 to 30 minutes, then wipe with a soft cloth.
